Creamy Tuscan Chicken

Ingredients
4 boneless, skinless chicken breasts
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup chopped sun-dried tomatoes, drained
1 cup chicken broth
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
3 cups baby spinach
Optional: cooked pasta, mashed potatoes, or crusty bread for serving
Directions
Pat the chicken dry, then season both sides with salt, pepper, and Italian seasoning.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5 to 6 minutes per side, until golden and cooked through. Transfer it to a plate.
Lower the heat to medium. Add the garlic and sun-dried tomatoes and cook for about 1 minute, stirring frequently.
Pour in the chicken broth and scrape up the flavorful browned bits from the skillet. Simmer for 2 to 3 minutes.
Stir in the heavy cream and Parmesan. Simmer gently for 3 to 5 minutes, until the sauce begins to thicken.
Add the spinach and stir until wilted. Return the chicken to the skillet and spoon the sauce over the top.
Simmer everything together for another 3 to 4 minutes. Serve with pasta, mashed potatoes, or crusty bread.
